CHOCOLATE BANANA CAKE

A delicious vegan cake, ideal for birthdays and special occasions or simple everyday decadence.

The recipe comes from a leaflet called "The Cake Scoffer", by Ronny and published by V.I.C.E (Vegan International Cake Engineers). I'm not profit-making so I don't think they'll mind me putting it here and saying it's DELICIOUS!

Chocolate Banana Cake

10 oz plain flour (both wholemeal and white work but they give different effects)
3 heaped tsp baking powder
2 oz cocoa (sifted to remove any lumps)
8 oz sugar
8 tbsp oil
10 floz water (or 8 floz water and 2 floz soya milk)
1 medium banana, mashed.

1.) Preheat oven to gasmark 5.
2.) Mix the first four ingredients together. Add the rest of the ingredients and thoroughly mix.
3.) Pour mixture into two greased 8 inch round tins (I used just one larger tin) and bake for 40 mins. Leave to cool in tins. Alternatively put all the mixture into one tin and carefully slice in half when cool. Sandwich halves together with...

Fudge Topping or Filling Stuff

2 oz marg
3 tbsp water
7 oz icing sugar
2 oz cocoa
1 tsp vanilla essence

1.) Melt marg over a very gentle heat, then add other ingredients and mix thoroughly. Leave to cool.
2.) Beat until stiff with an electric mixer or a whisk. Use to sandwich the two cake halves together, then spread some more over the top, or use it all in the middle of the cake and top with chocolate icing.
